Chateau de Malle 'M de Malle' 2015, Graves (France) - Golden hued with flecks of light green, the Chateau de Malle 'M de Malle' 2015 opens with exotic fruit aromas and soft spicy notes, leading to a supple roundness on the palate with white flower, kiwi and gooseberry, a nice minerality, and a soft, dry structure that closes with some mouthwatering acidity. Grown in the distinctive sandy, gravelly-clay soils of the Graves appellation, this Bourdeaux white is a blend of 78% Sauvignon Blanc and 22% Sémillon. Aged between 6 and 9 months in split stave-wood, the wine is bottled in the month of May/June and then rested for a few months.
Food Pairings - Fresh starters, salads, seafood, cooked or raw white fish, cooked in sauce or grilled white meat, fresh or dry goat’s cheese.
Winemaker Notes - After the grapes are brought to the cellars in small loads. An initial pre-fermentation cold maceration precedes the very delicate pressing of the grapes. The addition of enzymes and the settling of the must are also done under strict cold temperature conditions. It spends approximately 9 months on the fine lees.
